I’m looking for a comedy horror movie from the 2010s I watched on Tubi last year, where a dumb guy pretends to be a vampire hunter to impress a girl he likes who is a vampire hunter. At the end, he accidentally kills the head vampire with an arrow from a crossbow, then writes a book based on his adventures of being a vampire slayer, like he was a badass.

This is Transylmania (2009).

Spoof horror in which a group of college kids do a semester abroad in Romania and realise that if the partying doesn't kill them, the vampires just might!

American college student, Rusty, wants to visit Romania to meet his online girlfriend, Draguta. He persuades several of his friends to go with him and spend a semester at Razvan University, located in a castle that was once the home of the vampire, Radu.

One of the professors at Razvan University, Teodora Van Sloan (played by Musetta Vander), teaches self-defense and is a vampire hunter, descended from a line of vampire hunters, including one who fought Radu 500 years earlier.

Radu and his minions secretly return to the castle shortly after the Americans arrive. Rusty and Radu happen to look exactly alike, especially after Rusty dresses up like a vampire for what he's led to believe is a vampire-themed orgy.

An American named Cliff pretends to be a vampire hunter (in appropriate attire) to impress some Romanian girls. Thinking he's for real, Teodora recruits him to help her slay the vampires. He doesn't know about the vampires yet and thinks she's just role-playing, but plays along, hoping to get lucky with her. In the climax, he inadvertently slays Radu with an arrow from a crossbow.

Years later, Cliff is a professor at Razvan University telling some more Romanian girls about his autobiography in which he embellishes what actually happened to make himself look like a cool, confident action hero.
